This is the perfect summer recipe, for a dinner with friends, Christmas, or when you want to impress. The combo of charred octopus with fresh salad, red onion, avocado and lemon is insane. Add the romesco sauce base and it's next level.

Ingredients for 4 servings

For the octopus:

  • 1 octopus 3.5 to 4.5 lbs (1.5-2kg) - fresh or frozen, frozen is even better because it's already tenderized
  • 1 bay leaf
  • 1 onion peeled and halved
  • Extra virgin olive oil
  • Flaky sea salt and freshly ground black pepper
  • Fresh chopped parsley
  • 2 lemons sliced for serving

For gourmet side

  • 14oz baby potatoes
  • 3 tbsp romesco sauce (you can buy it or make it: 帽ora peppers, tomato, garlic, almonds)
  • Red sorrel leaves or microgreens

For fresh salad

  • 1 lollo or escarole lettuce, washed
  • 1/2 red onion thinly sliced
  • 1 avocado sliced
  • Juice of 1/2 lemon
  • 4 tbsp extra virgin olive oil

How to Make Tender Grilled Octopus - Step by Step

Step 1: The trick so it never gets chewy (MOST IMPORTANT)

If your octopus is fresh, freeze it for 48 hours. This breaks the fibers and it's the restaurant secret. If you bought it frozen, perfect, skip this. Thaw overnight in the fridge in a bowl.

Put a very large pot with water, bay leaf and half onion. When it boils hard, grab the octopus by the head and "scare it": dip it in and out of the boiling water 3 times. You will see the tentacles curl. On the third time, leave it inside.

Step 2: Exact cooking time

Cook 35 minutes per kilo. For a 1.5kg one, about 45-50 minutes. Don't add salt yet. Poke the thick part of the tentacle with a toothpick: if it goes in easily, it's ready. Turn off heat and let it rest 15 minutes inside the water. Then take it out and drain very well. Drying it is key for crispy grill later. Save 1 cup of cooking water.

Step 3: Prepare sides

Meanwhile, cook baby potatoes 15 min in the octopus water (it gives amazing flavor). Then smash them slightly with a fork. For salad, mix lettuce, red onion, avocado, chopped parsley, lemon juice and oil.

Step 4: Grill - The crispy touch

Cut tentacles separately. Brush with olive oil. Put a grill, griddle or cast iron skillet VERY hot, almost smoking. Put octopus 2-3 minutes per side without moving too much. It has to get charred with black toasted spots. That's where all the smoky flavor is. Add flaky salt at the end, never before.

Step 5: Plating like in photo

Gourmet Version (Photo 1): Put romesco sauce base, octopus tentacle in spiral on top, smashed potatoes around, flaky salt and chopped parsley.

Fresh Summer Version (Photo 2): On a black plate or slate, put fresh salad on one side, crispy octopus on the other, lemon slices around and a generous drizzle of shiny olive oil on top to make it glossy. Sprinkle parsley and flaky salt.

Grandma's tricks for perfect octopus

  1. Don't be afraid of high heat: If the griddle is not burning hot, octopus releases water and boils, doesn't grill. It has to sizzle loud.
  2. Dry, very dry: After boiling, dry with paper towels. The drier, the crispier.
  3. Don't throw cooking water: Use it for rice, potatoes or fideu谩. It's pure gold.
  4. No grill? Oven at 480°F with broil 5 minutes also works.

Variations you will love

  • Galician style express: Instead of grilling, slice it, add Spanish paprika, oil and flaky salt.

Boiled lasts 2 days in fridge in a container with its water. Grilled is better eaten right away, if you reheat it gets tough. If you have leftovers, use it cold in salad next day, it's delicious too.

Can I use pre-cooked octopus from store? Yes, you skip steps 1 and 2. Direct to grill 3 min per side and done. Very good.

How much octopus per person? 10-14oz per person as main course, 5oz as tapa.

Why does it get tough? 99% is lack of freezing or short cooking. Freeze 48h and cook the time I told you.

The "scaring" the octopus trick: If you are going to boil fresh octopus at home, this traditional Spanish grandma's secret is a must. Hold the octopus by the head and dip the tentacles into the boiling water for 3 seconds, pull it out, and repeat this process 3 times in a row before letting it boil completely. This breaks down the collagen fibers in the skin, preventing it from peeling off and ensuring the inside stays perfectly tender.

Absolute drying before the grill: To get that spectacular, crispy exterior crust, remove the cooked octopus tentacles and dry them meticulously with plenty of paper towels. If you place them on the grill while wet, the water will create steam, boiling the octopus all over again and leaving it with a chewy texture instead of a charred, crispy one.

Maximum heat and short time: Your grill or cast-iron skillet must be smoking hot with a thin drizzle of olive oil before adding the octopus. Cook it for just 2 to 3 minutes per side on maximum heat. Since the octopus is already cooked on the inside, you only want to sear the suckers quickly so the core does not dry out.

Roasted garlic alioli sauce: If the traditional romesco sauce is not your thing, pair the octopus with a homemade roasted garlic alioli.
