Colombian Shredded Beef and Chickpea Stew - Hearty & Juicy This Colombian chickpea stew with shredded beef is pure comfort food. Tender beef that falls apart with a fork, chickpeas that soak up all the homemade tomato sauce with cumin and paprika, and fresh cilantro on top. It's a complete, budget-friendly meal that tastes even better the next day. The secret is cooking the beef until super tender first, then letting everything simmer together for 10-15 minutes so the sauce thickens naturally. I serve it with fluffy white rice, sliced avocado, and sweet fried plantains for the full Colombian experience. 🧾 Ingredients for 4 servings 2 cups cooked chickpeas (400g) - canned is fine, rinsed 500g beef for shredding (flank, chuck or brisket) 2 ripe tomatoes diced 1 white onion diced 2 garlic cloves minced 1 red bell pepper diced 2 tbsp tomato paste 1 cup beef broth (from cooking the beef) 1 tsp ground cumin 1 tsp sweet paprika Salt and pepper to taste 2 tbsp oil Fr...

The result is an explosion of flavor: the natural sweetness of the clam, the saltiness of the soy and the heat of fresh chili. What Clams to Use? You can use Manila clams, littleneck clams, cockles or any small fresh clams. The key is that they are very fresh and you purge them well to remove all sand. If you buy frozen clams, thaw them slowly in the fridge and pat them...
